smoked beef chuck roast. probably drop them in the smoker around 11am for around 3 hours, move them to a foil pan with onions and beef stock, seal it about an hour later, should be rested and ready to shred and devour by 6pm.

Catfish, Hushpuppies, Fries, Corn on the Cobb and Peach Ice Cream

Two of my buddies caught the fish over the weekend and there's plenty
for about 20 of us.

I guess eating Fish dishes must be a Deep South thing for 4th of July
Never been to one BBQ that was severing these type of Foods

Love smoked Chucks. Will be doing one with Mardi gras rub and wrap around 165 with a cup of beer up to 200-205. That and some pulled pork with a mustard vinegar sauce.

haha,, A GREAT recipe, I will share,,

CHEAP skirt steak, and throw salt ALL over em, put em in fridge for 3 hours,,

scrape 95% of salt off, throw on grill for 10 mins,, + potato salad + corn

AND some Pabst!! lolol

Nah, just got some tuna fresh caught here right in Charleston, SC...lol

It won't make it till tomorrow, though, so I guess it doesn't count, along with the fresh caught shrimp I just scooped up too...lol

Tomorrow, hmm, got some nice steaks I think I'll grill, along with some fresh veggies from the garden (squash, zucchini, cukes, maters)...
